Tasty Street food from Main Ingredient…

Today we bring you a fresh, delicious street food recipe of Goan-Style Pork Curry from the lovely ladies at Main Ingredient!

Main Ingredient is run by Flip & Hoops who have over 20 years of event experience between them. They serve lip smacking food for all types of events including weddings out of their Street Food Van, covering Hertfordshire, London and most of the UK.

Main Ingredient- Goan style Pork Curry_0004


Serves 4

2-3 red chillies (dried or fresh)

1 tsp black pepper corns (or ground black pepper)

1 tsp cardamom seeds/powder

7 cm cinnamon stick or ( 2tsp ground cinnamon)

1 tsp black mustard seeds or 1 dessert spoon of mustard oil

1 tsp fenugreek seeds

2 tsp cumin seeds

1/2 tsp turmeric powder

2 tsp coriander seeds / powder

5 tbsp wine vinegar or palm vinegar if you can find it at an asian store

1 tsp salt
1 tsp light brown sugar

3 cm ginger
200g onions 
1 bulb garlic

Light oil or ghee to fry

6 tbsp water + another 250 ml or chicken stock

1kg pork shoulder steaks cut into cubes

Pre-heat the oven to 150 degrees centigrade

Chop the onion, garlic and ginger. Fry until brown then place into a food processor with a little water and process to a paste

Today our Meet The Supplier feature is about one of our newest Mr & Mrs Unique recruits, Le Swine. Now, Im happy to say that this catering company gets me all excited as i love to find new companies that really stand out. Not only is the passion behind the team clear, they serve their gourmet free-range bacon butty (optional egg) from a 1969 Austin Morris Ambulance… how frigging cool is that!!!

Just imagine them turning up for your wedding or event and serving lip smacking, delicious bacon butty from that beauty! Whether its for daytime, evening buffet or for the following morning breakfast treat… you need to check them out! Le Swine is all about taking something humble and turning it into something spectacular. This idea runs throughout our business, from our Bacon Butty to the Ambulance it is served from. We want to introduce people to a Bacon Butty like they’ve never tasted before!

What made you start up the business…

Le Swine was born from a simple bacon butty that had been made for a morning meeting, whilst I was working with my mentor Bruno
