Delicious Summer Ice Cream Recipe…

Today the lovely Natasha from Nevie Pie Cakes shares with us this fab ice cream recipe… Toasted Oatmeal Ice Cream.

In this weather its the perfect summer treat… Im so hungry even looking at these photos!!

This is a recipe I used to make as a teenager, it is from an old Marks and Spencer cookbook that I still treasure.

It sounds unusual, but it is delicious, and you can fool yourself into believing that it is healthy, as it contains oats! The oats and sugar turn into praline, and give the ice cream a gorgeous nutty, toffee taste. You must really watch the oat/sugar mixture while it is under the grill, as it burns very easily!

I had intended to make use of my ice cream maker, but it had lain idle for so long in the back of a cupboard that the liquid in the freezer bowl had started to leak. So I used the old fashioned ‘taking it out of the freezer regularly and beating it’ method. You only need to do this three or four times, but just make sure that the ice cream is semi-frozen when you do, or it won’t be effective.

Try adding the ice cream to some chocolate cookies – they make the perfect ice cream sandwich!

Thanks Natasha! Who cares …

Spiced Pumpkin Bundt Cake…

Today we have the lovely Natasha from Nevie-Pie Cakes sharing a yummy cake recipe that will use up your leftover Halloween pumpkins!

Over the coming weeks we’ll be bringing you lots of cracking recipes for you to try out in the lead up to Christmas, all from our fantastic suppliers!

If you are anything like me, you probably have a couple of pumpkins lying around left over from Halloween. Or you may have been super efficient and roasted the carvings at the time, and are left with a sorry looking bag of orange at the bottom of your freezer. I am exactly the same with good intentions every year that never reach fruition.

So I decided to make a change this year and I created the ‘Bundtkin’. A spiced pumpkin bundt cake. I roasted the pumpkin first to give it more flavour and then blitzed it up in a blender.

I have to say it was very delicious, it had more of a pudding texture than cake but it would be delicious warm and covered in cream (but then what wouldn’t?)
